From the Tropics of Cancer to Capricorn a mere 1000 miles in distance, coffee grows in this sunny equatorial belt around the world. Here, the world's best farmers cultivate great coffee beans. The small growers among them, of course, are not prolific producers of coffee beans, but are, in most circles, considered the best. By carefully cultivating their plants with an immense drive to produce the highest quality coffee, they forgo quantity to create the definitive cup of coffee brilliance in the fragrant aroma, flavor and experience of the coffee drinker.
In that vein, our goal is to pursue the preservation of the freshness of this high-quality coffee. We utilize bag-valve technology to help preserve the freshness. Freshly roasted coffee is packaged immediately and valve-bag technology allows CO2 to escape and prevents the outside air from entering the bag. This helps keep your coffee fresher longer. We recommend storing it in a cool dry place in a tightly sealed opaque container to help preserve the freshness, aroma and flavor of your coffee.

The small growers of Pitalito, situated in the southern reaches of Huila, nestled on the slopes of the foothills of the massive mountain range of the Andes, in the Valley of Laboyos, harvest this coffee from the volcanic soil of the surrounding mountains where this high-altitude coffee is fed organic nutrients creating its unique flavor.

scale farms and rural villages along the mountain ranges and foothills of the Andes, amidst fresh breezes and mild climate, veiled under the shade of tall banana and plane trees that reach 30–50 meters high, this coffee is flavored by gentle sun light, the symphony of the soils and a 1400 meter altitude.

NATURAL SWEET CANE
On the day of harvesting the cane is squeezed to extract its natural sweet juices, cane with superior characteristics contains a higher quantity of juice and an elevated sugar content of 20% or more. After the juice is filtered it is heated over open fires or simple furnaces to evaporate water. Experienced artisans, using sight and sound, shepherd the juices through the heating process. When heating is nearly complete, sweetness is measured. A sugar content of 90 to 95% is acceptable. Then, testers are cooled to check solidity. After the heating process is judged complete, the juices are briskly agitated to infuse air and stimulate even crystallization. Through this careful artisanal process, the quality of this sweet natural cane is perfected.
